Additional information

Training at Estela requires discipline, speed, humility, and genuine interest in ingredient-driven cooking. A strong candidate should be prepared for a fast-paced kitchen where small plates, bold flavors, clean station work, timing, consistency, and communication are essential. Because Estela’s style is refined but not overly formal, the participant should understand that simplicity still requires precision, restraint, and strong fundamentals.

To succeed in this environment, the participant should bring solid culinary basics, stamina, organization, and the ability to receive direct feedback without becoming discouraged. Estela appears best suited for candidates who can work cleanly, stay focused during busy service, adapt to a compact menu, and show curiosity about Mediterranean flavors, seasonal ingredients, and contemporary New York dining.

For J-1 purposes, this role should be structured as supervised training rather than ordinary staffing. The training should focus on progressive exposure to mise en place, station organization, ingredient preparation, sauces, sanitation, plating standards, service timing, chef communication, and quality control. The participant should be ready to observe, practice, improve, and contribute professionally while learning how a Michelin-starred New York restaurant delivers energetic, ingredient-focused cuisine with consistency and confidence.
