Prior internships, stages, apprenticeships, commis, line cook, or chef de partie exposure are preferred. The candidate must be coachable, punctual, adaptable, organized, resilient, and committed to structured training and cultural exchange.
Compensation
Pay rate: $20+ per hour, based on the participant’s experience and qualifications.
Benefits & perks
Michelin-level culinary training, chef mentorship, European bistro exposure, seasonal ingredients, cultural exchange, and staff meals where applicable.
Additional information
Training at Bridges requires discipline, curiosity, and the ability to learn in a kitchen that blends bistro ease with serious Michelin-level ambition. A strong candidate should be comfortable with a tight, focused menu where every detail matters, from ingredient preparation and sauce work to timing, plating, cleanliness, and communication during service.
To succeed in this environment, the participant should bring solid culinary fundamentals, respect for European technique, interest in contemporary cooking, and the humility to receive direct feedback. Bridges appears best suited for candidates who can balance creativity with restraint, work cleanly under pressure, stay organized during service, and adapt quickly to a small, high-performing kitchen.
For J-1 purposes, this role should be structured as supervised training rather than ordinary staffing. The training should focus on progressive exposure to mise en place, station organization, seasonal ingredient handling, sauces, plating standards, sanitation, service timing, chef communication, and quality control. The participant should be prepared to observe, repeat, improve, and contribute with professionalism while learning how a Michelin-starred New York restaurant builds consistency, identity, and guest excitement.
