Description
This structured Culinary Arts Rotational Internship at Arquet provides participants with immersive training in a contemporary California kitchen led by Michelin-starred Chef Alex Hong. Rotations cover kitchen safety, ingredient preparation, garde manger, hot-line execution, wood-fired cooking, seafood and meat fabrication, plating, and service coordination. Participants will work with seasonal, locally sourced ingredients while developing knowledge of recipe execution, flavor development, portion control, quality standards, inventory practices, and waste reduction. Through observation, supervised practice, and regular feedback, participants will strengthen technical skills, organization, communication, and their understanding of refined yet approachable restaurant operations.
General requirements
Candidates must meet J-1 Intern or Trainee eligibility requirements and have formal education or relevant professional experience in Culinary Arts, Gastronomy or related field. Previous experience in a fine-dining, Michelin-starred, or high-volume professional kitchen is strongly preferred. Applicants should demonstrate solid knife skills, basic cooking techniques, food-safety knowledge, attention to detail, and a genuine interest in seasonal California cuisine and wood-fired cooking.
Intermediate to advanced English, professionalism, reliability, teamwork, and openness to feedback are required. Candidates must be able to stand for extended periods, lift up to 50 pounds, and work a flexible schedule, including evenings, weekends, and holidays.
Compensation
$19.61 per hour.
