Belly of the Beast is an upscale casual restaurant in Spring, Texas, serving Mexican and New American cuisine. It is the expression of Chef Thomas Bille's personal and professional experiences, coupled with Elizabeth's expertise in service and hospitality, delivering a dining experience through the lens of a first-generation Mexican American.
The restaurant aims to provide high-quality ingredients handled with respect and cooked with love. Thomas Bille won the James Beard Foundation award for Best Chef: Texas in 2025, and the restaurant received a Michelin Bib Gourmand in 2025.
